Last night we had pasta for dinner and Ryan said "Wow! This is actually good." hmmm, success at last ;o] If you want to make the dinner it was Penne With Creamy Garlic Sauce (not too saucy) from the San Giorgio Penne Rigate pasta box. I added chicken to mine. This is the recipe...(sorry no photo because in this house there is no stopping for photos when food is involved!)
I cut chicken (around 1 1/2 to 2 lbs) up into 1 inch cubes added a little garlic salt and pepper and cooked in a pan with olive oil until browned and cooked through. Set chicken aside.
1 Package (1 lb) Penne Rigate Pasta
2 Tbsp Butter
2 Large Cloves of Garlic, Minced
2 Tbsp Flour
3/4 Cup Chicken Broth
3/4 Cup Milk (or Light Cream)
2 tsp Dried Parsley Flakes
Salt and Pepper to Taste
1/3 Cup Grated Parmesan Cheese
Cook pasta in boiling water with a little salt for 7 minutes. While the pasta is cooking in a small saucepan, melt butter; add garlic and cook over medium heat for 1 minute. Add flour and cook 1 minute, stirring constantly. Stir in broth and milk. Cook, stirring frequently until sauce boils and thickens. Add parsley, salt and pepper to taste, cheese, and the cooked chicken. Stir until cheese is melted. Toss with the hot pasta; serve immediately. 8 (1 cup) servings. We had this with a salad and Italian bread. I don't like pasta with a heavy white sauce - this one has only a hint of the sauce. Yum.
